The Rose Truffle

The brochure doesn’t have an official description of the rose truffle because it’s a seasonal special, but it’s a dark chocolate truffle brushed with a rosy powder and topped with a bud of pink sugar.

The other day I was listening to The Splendid Table and the guest was talking about tasting chocolate. She explained the difference between odor and aroma. I’d always thought aroma was the nicey-nice word and odor was reserved for something bad. Au contraire!

Odor is what you experience just from your sense of smell. So before you eat the chocolate, you’re supposed to hold it to your nose and give it a long whiff.

Aroma is what happens in your mouth. It employs the back of the nasal passages and is more of a holistic thing because the taste buds are also involved.

The odor of today’s truffle is pure chocolate, and in fact, the taste is pretty chocolatey too. But the aroma is one of roses and fresh spring.

    This actually sounds like quite the spiritual discipline–to eat one chocolate and enjoy both its odor and its aroma AND its taste utterly and completely. And be content. (I don’t know about the content part but it would grow on you, right?) In fact, if anyone asks you what you’re doing for lent, tell them you’re eating chocolate.

    PPB, I had the same thought. One truffle a day sounds very decadent, and in the big scheme of things, it is. But I was pretty undisciplined while pregnant, so limiting myself to one treat a day is actually an improvement. And when you overlay that with the attentiveness–really enjoying it rather than mindlessly scarfing it down like I have often done with food–it does feel oddly Lenten.
